Sunflower Pesto

Ingredients: 

2 cups packed basil
1/3 cup olive oil
1/3 cup sunflower seeds
2 cloves garlice
half a lemon juice
salt n peppa

 

 

 



Method:
 

Add basil, sunflower seeds, garlic, lemon juice, and salt & pepper to taste to a food processor or blender.




Start the processor, slowly drizzle the olive oil into the food processor until a sauce forms. It might not be the whole 1/3 cup or it might take more until you get a consistency you like. 


I added about 1/3 cup parmesan for a little more authentic pesto taste.





Use immediately or store for up to a week in an airtight container in the fridge.

This was very nutty and, according to me, very delicious.  I would definitley add more olive oil next time, it was a bit paste like, so I had to add extra oil in the pot and toss the pasta around to get it the right consistency.  

Im gonna go out today and rustle up some pine nuts to try pesto the orginal way! Catch ya later Bill and Ted 💗
