Sheet Pan Fried BBQ Chicken Nachos
Ingredients:
Tortilla Chips
3 Strips crispy bacon; chopped
Fried Chicken, I had two pieces left over, a thigh and a breast, and it was plenty; chopped
1/2 cup shredded Mexican three cheese blend
BBQ Sauce of your choosin
Sour cream
1/4 cup shredded iceberg
1/4 cup chopped tomatoes
1 whole avocado
Method:
Preheat your oven to 325
Spray some cooking oil (PAM) on your pan
and throw down some chips
Make certain not to layer them; fan 'em out
In a bowl mix in your bbq sauce and chicken. I didnt use much sauce, probably 3 tbl spoons and it was just "wet" enough
Drop your chicken over the chips, evenly. Next, sprinkle your bacon crumbles over the chips and chicken.
Top with cheese.
Bake all this for 15 minutes. Any longer and the cheese will burn. Mine did, all along the outside of the nachos....it was still delicious.
Garnish with cold veggies and sour cream.
This was a fantastic lunch for the old ball and chain. Not only did he love it, but it was a great way to get rid of some leftovers. Surely, any and all changes/deviations would be excellent.
