Pretzel focaccia
One way to make a pretzel focaccia
Ingredients:
3 1/2 cups warm water
6 1/4 cups flour
2 tsp kosher salt
1 tsp yeast
1 tbsp cold butter for pan and 3 tbsp butter melted
2 tbsp oil
For pretzel effect:
2 tbsp baking soda
1/2 cup boiling water
Method:
Mix flour, salt and yeast together
Gradually add the warm water with a wooden spoon
Cover her up
Let it rest unagitated for 12 to 18 hours
Take your sheet pan and some cold butter and rub every inch of that pan with butter, that way she'll really crisp up
You'll also wanna get some olive oil on your pan, and your hands, measure it with your heart
Turn her out and give her a nice fit to a well oiled and well buttered pan
Combine boiling water and baking soda. Mix it up with a pastry brush and then slather about half on.
Let rest for 30 minutes
Now
Place a rack in center of oven; preheat to 475°. Gently brush dough with reserved baking soda solution (you may not use it all). Bake 10 minutes. Rotate pan from front to back and brush focaccia with 3 Tbsp. melted butter; sprinkle generously with pretzel salt. Continue to bake until top is deeply browned (like a pretzel!) and underside looks browned and crispy when pried up with a spatula, about 10 minutes longer.
SPRINKLE THE TOP WITH A LITTLE BIT OF SALT, I CANNOT STRESS THIS ENOUGH! I put waaaaay to much salt on this. I got carried away because so captivating was the pretzel effect with each sprinkle of salt, that I just kept doing it! Whoops!
