Focaccia
The one way to make a ligurian focaccia:
Liguria, Italy (what)
Ingredients:
2 1/2 cups water
2 1/2 tsp of honey
1/2 tsp of yeast
5 1/3 cup flour
2 1/2 tsp kosher salt
1/4 cup oil
lots of oil, dude. and lots of salt. just keep them out
Ligurian Salt Brine
1/3 cup water
1 tsp kosher salt
(mix these two together, done)
Method
get a bowl. fill with lukewarm water. put da yeast in. put in the honey.
"hands are the ultimate tools"
add then 5 and a third cups flour and the 2 1/2 tsp kosher salt together then slowly add the
yeast -honey-water combo
add in 1/4 cup olive oil
now transfer it to a nice big bowl, nice big vessel
cover it with a dishtowel or a mopeen for your non I's
for 12 to 14 hours, and leave that bitch alone, dont go messin with it
after all dat, move her onto a well oiled pan, coupla tablespoons oil in there, whatever
It doesnt seem to matter if you overuse oil...apparently the more the better. So measure that shit with your heart.
stretch her out a bit to fit the pan
and let her rest again, uncovered for 30 minutes
then when she wakes up, use your well oiled fingers to make dimples
pour on your Ligurian Salt Brine, it will live inside the dimples and make it super crunchy and super salty and super delicious
wait some more time, like another 20 to 30 minutes
preheat to 450
preheat to 450
bake her at 450 for 20 mins, so says the recipe, but mine needed 30 minutes
yummers
This recipe is taken from "Its Alive" featuring Samin Nosrat (and Brad Leone.) She is a ball of sunshine and I love her. And so is he.
